Vietnamese Cold Udon with Pork Neck meat

Ingredients
Japanese Udon 1pc
Onion (sliced) optional
Minced pork 80gm

Cold Noodle Dressing
White vinegar 3/4 cup
Fish sauce 2 tbsp
Lime juice 1 pc
Lime zest 1 pc
Chili 40gm
Sugar 4 tbsp

Pork Neck Marinade
Pork neck 200gm
Soy sauce 1 tsp
Salt optional
Sugar 1 tsp
Cornstarch 1/2 tbsp

Method
1. Cook udon in boiling water for 1 minute and stir with chopsticks. Drained and then soak into ice water for 5 minutes. Drained again and put into a bowl. Set aside.
2. Mix pork neck with marinade and leave for 20 minites. Then pan-fried to done and cut to thin slice. Saute minced pork to done and season weith salt. Set aside.
3. Blend all remaining ingredients in a blender but do not puree. Put the pork neck, minced pork and onion on udon and mix with dressing to serve.
