Noodles in Imitation Shark’s Fin Soup
Amoy Flour Vermicelli 2 bunch
Chicken Stock 1.5 cup
Shitake Mushrooms (finely sliced) 2 pcs
Jinhua Ham (finely shredded) 15 gm
Soy Sauce 0.5 tea spoon
Dark Soy Sauce 0.5 table spoon
Pork Loin Meat (finely shredded) 30 gm
Dried Black Fungus (soaked until soft) 10 gm
Veggie Shark’s Fin 50 gm
Cornstarch with water optional
Eggs 0.5 pc
1. Cook vermicelli in boiling water for 1-2 minutes, stirring with chopsticks. Scoop it into the bowl. Set aside.
2. Boil the chicken stock, add all the ingredients except cornstarch and eggs. Simmer for 5 minutes until the flavor comes out.
3. Remove from heat, add cornstarch and egg beaten, stir while it’s still hot. Pour it into the vermicelli.
4. Serve the imitation shark’s fin soup with red vinegar and Sesame oil.
